Strawberry Chicken Salad Ingredients

2 chicken breasts, grilled and chopped
1 head lettuce, chopped
2 cups strawberries, chopped
½ cup dried cranberries
50g goat cheese
If it’s Greek Feta, just crumble it
If it’s Dali rubing, cut into cubes, saute until golden and add a pinch of salt

¼ cup sliced almonds, Toast until golden brown

Strawberry Vinegar Dressing ingredients:

1 cup strawberries
¼ cup Black Dragon Red Plum Vinegar
¼ cup extra-virgin olive oil
1 tbsp Dijon mustard

1 clove garlic, minced
¼ tsp salt
¼ tsp pepper

Instructions

First make the dressing, put all the dressing ingredients in a food processor and blend, but make sure you leave a few little strawberry chunks, you don’t want to completely liquefy it. Set on one side.

In a large bowl place all the salad ingredients, don’t throw them all together or the lettuce will look tired. Pour the salad dressing over the top just before serving.

Dijon Mustard
Smoother, sharper and tangier than “American” mustard.

草莓香煎鸡胸肉色拉

食材配料:
两片鸡胸肉,用少许盐、白兰地盐渍一晚,次日做色拉前,煎熟至两面金黄,冷却后切成条
一颗生菜,用手撕成小片
两杯新鲜草莓,洗净去蒂,切片备用
半杯蔓越梅干
50克 山羊奶酪
如果是希腊的“Feta”菲达奶酪,只需用手揉碎
如果是大理羊奶乳饼,切成小丁,入锅翻炒成金黄色,撒少许盐
1/4 杯杏仁片, 入锅干焙至两面金黄,散发出香味

草莓油醋汁:

食材配料:
1杯新鲜草莓,洗净去蒂
1/4 杯 墨龙李子醋
1/4 杯 特级初榨橄榄油
一汤匙 法国狄戎芥末酱(“Dijon mustard”参看以下)
一瓣大蒜,剁成蒜蓉
¼ 茶匙 盐
¼ 茶匙 现磨黑胡椒粉

做法:

先做草莓油醋汁,把所有配料放在食物料理机里点动几下搅碎成浓稠的酱汁,无需打得太过细腻,可以留些草莓颗粒,放置一边备用。

在一个大碗里,依次放入生菜、鸡肉、蔓越莓干、奶酪、杏仁片和草莓,注意动作要轻,否则生菜和草莓容易打蔫,上桌后,在最后一刻才淋上草莓油醋汁,轻轻拌匀,大动食指吧!

法国狄戎芥末酱(“Dijon mustard”)
有无籽和有籽的两种,都可以用。它比美式芥末酱更有味,更加滑、辣、酸。
