Christmas Gingerbread Cookies

Ingredients:

500g white flour
125g butter (salted is fine)
75g brown sugar
50g Black Dragon Cinnamon Sugar
2 tbsp Black Dragon Crystallised Ginger, pureed
1 tsp nutmeg
1 tsp baking powder
1 tsp ground ginger
1 tsp ground cloves
2 eggs

To make:

1. Mix the butter and brown sugar, add the egg, mix evenly then set to one side.

2. Mix all the remaining dry ingredients then add to the butter/sugar mix. Need into a dough (if it seems to dry, you add a little (little!) milk).

3. Let the dough rise then wrap in Clingfilm, put in the fridge and cool for two hours, then roll out till 1/2cm thick slab, use cookie cutters to cut out your shapes.

4. Preheat your oven to 180 degrees C, and bake your cookies for 8 – 12 minutes, when you can smell the lovely ginger fragrance they’re done. After removing from the oven, let them cool off for two minutes, then place on a rack to cool thoroughly.

Royal (egg white) icing ingredients:

2 eggs
1 tsp lemon juice
1 tbsp water
500g icing sugar (you can make this yourself by putting granulated sugar through a food processor until it is a fine powder, then add cornstarch at a ratio of 2:1 sugar to starch, mix thoroughly)
Food colouring
Cake decorations, sweets etc

To make:

In a big bowl mix together the icing sugar, egg white, and lemon juice. Note that when adding the lemon juice or water just add a very little at a time.

Royal icing is used especially for decorating cakes and biscuits, it is dries very hard so is suitable for decorations with a sharp edge. It is used to make lace work, flowers and other decorative sugar adornments, and can be used as an edible adhesive.

圣诞姜饼人饼干

配料:

500克 面粉
125克 黄油
75克 红糖
50克 墨龙玉桂糖
2汤匙墨龙黄姜果酱,剁碎
1茶匙肉豆蔻
1茶匙小苏打
2茶匙姜粉
1茶匙丁香粉
2个鸡蛋

做法:

1、把黄油和红糖搅拌均匀,加入鸡蛋搅匀备用

2、把所有干的配料混合均匀后加入1,揉成光滑的面团(如果觉得干了,可以慢慢加入几滴牛奶)

3、和好的面团用保鲜膜包好, 放在冰箱冷藏半个小时后擀开成0.5厘米厚度,用各种形状的饼干模子切出形状

4、烤箱预热至180度,饼干放入烤箱后烤8-12分钟,闻到香味就是好了。从烤箱取出后,稍微冷却2分钟,取出放在架子上完全冷却后即可。

皇家糖霜(蛋白糖霜)配料:
两个 蛋白
1茶匙 柠檬汁
2汤匙凉开水
500克 糖霜粉,(也可以自己用研磨机把白砂糖磨成细粉,按照2:1的比例加入糖分和玉米淀粉,搅匀即成)
食用色素
糖饰品、糖果、软糖等

皇家糖霜做法:
在一个大碗里把糖粉、蛋白、柠檬汁全部搅拌均匀即可。注意加柠檬汁或者水的时候(每次放只要一丁点,慢慢加,来调整浓稠度。
皇家糖霜是一种会变硬的蛋糕、饼干的糖霜,非常适合用用裱花袋装了,来画细线,也可以当作可食粘合剂。
