German New Year Marzipan Pigs


These cute little pigs are given at New Years for good luck in Germany (they’re known as “Glücksschwein”). Of course you don’t have to stick to pigs, you can add a bit of food colouring and make all kinds of fun things:



500g icing sugar
2 tbsp corn starch
250g almond
s, finely ground blanched
2 egg whites
1/2 teaspoon Black Dragon citrus salt

1. Blanch the raw almonds (bring water to the boil, throw in the raw almonds and watch them swell up, throw them immediately into cold water, now it’s easy to take the skin off. Then toast them, ie. on a med-high heat in a saucepan stir continuously till tinged golden brown. Now in a food processor grind to a fine powder. Set to one side.

2. In the food processor, grind the sugar and corn starch into a very fine powder. Add the almond powder, eggs, citrus salt, rose petal preserve? and knead with your hands until a smooth dough. Place in the fridge and chill for 24 hours to make the dough easier to work with.





500克 白砂糖,磨成粉
2汤匙 玉米淀粉(也可以用汤圆粉)
2个 蛋白
1/2茶匙 墨龙柑橘果香盐
250克 杏仁粉


1. 把生的带皮杏仁放在煮沸中煮2分钟,皮泡起来过冷水,沥干水分,剥皮,然后在平底锅或者烤箱里180度10分钟,烤至金黄,闻到香味就说明快好了。用搅拌机磨成细粉后放置一旁备用。

2. 用搅拌机把白砂糖磨成粉、加入玉米淀粉、杏仁粉、蛋白、柑橘果香盐,混匀后揉成一个光滑的面团。放置冰箱24个小时(面团会更容易造型)。
